The Lost Art of an Evening Out: An Evening at Eddie V's

There was a time when going out to dinner meant more than simply making a reservation. It meant dressing for the occasion, meeting friends or family, enjoying a thoughtfully prepared cocktail before the first course arrived, and settling in for an evening that promised more than just a meal.

    Some places still understand that.

Eddie V's is one of them.

Joining Amy and me were my sister, Terri, and brother-in-law, Rob, visiting from Columbia, South Carolina. Over the years we've developed a wonderful tradition. They come south to enjoy everything Florida has to offer, while we look forward to our visits north to experience the charm, scenery, and hospitality of South Carolina. Every visit becomes another opportunity to discover somewhere memorable together, and Eddie V's proved to be the perfect choice.

The evening began before we ever reached our table.

As we entered, both Amy and Terri were greeted with beautiful long-stemmed red roses, a gracious tradition that immediately set the tone for the evening. It was an unexpected gesture—simple yet elegant—that quietly reminded us this wasn't going to be just another dinner reservation.

    Then came the music.

The unmistakable sound of a piano accompanied by an upright bass floated effortlessly through the room. Rich wood accents, deep leather banquettes, softly illuminated dining areas, impeccably dressed guests, and attentive servers moving gracefully throughout the restaurant created an atmosphere that immediately drew us in.

The entire experience reminded me of watching every episode of Mad Men in a single evening.

There was an unmistakable Rat Pack sophistication in the air. You could almost imagine Frank Sinatra strolling in for a late-night cocktail. Eddie V's captures the spirit of the great supper clubs of the late 1940s while remaining completely authentic to itself. It feels less like a restaurant and more like an evening waiting to unfold.

The bar is where that feeling comes alive.

This isn't simply where guests gather while waiting for a table. It's where the evening truly begins. Behind an expansive, well-equipped bar that spans nearly the length of the room, bartenders work with the choreography of seasoned professionals, each movement precise and perfectly timed, as coupe glasses catch the light and familiar jazz standards drift throughout the room.

It was precisely because of that atmosphere that we chose to dine in the bar rather than the main dining room. We weren't simply looking for an excellent meal—we wanted to be part of the music, the conversations, and the unmistakable energy that makes this room the heart of Eddie V's.

Our server, Aileen, introduced herself with the warmth and confidence of someone who genuinely enjoys what she does. Throughout the evening she struck that perfect balance between attentiveness and allowing us to enjoy one another's company. A talented mixologist herself, she happily discussed several of the cocktails on the menu, shared recipes, and guided us through the evening with the quiet confidence that comes only from years of experience.

Dinner began with a delightful amuse-bouche of toasted brioche topped with creamy avocado, finely chopped shiitake mushrooms, and finished with a delicate balsamic drizzle. It was a wonderful way to begin the meal.

I followed with the Hamachi sashimi. Delicate slices of pristine fish were accented with just enough citrus and a gentle touch of spice to enhance the natural flavor without overwhelming it. It was beautifully balanced and one of my favorite courses of the evening.

If Eddie V's celebrates the lost art of an evening out, its cocktails celebrate the lost art of cocktail making. These aren't drinks created simply to follow the latest trend or look good on social media. They're timeless classics and imaginative originals, prepared with the same care and craftsmanship that defined the great supper clubs of another era.

    Hope Diamond Cocktail

I began with a Blade and Bow bourbon served over a large crystal-clear sphere of ice, allowing the bourbon's rich caramel and vanilla notes to shine.

Amy selected the Hope Diamond, one of Eddie V's signature cocktails. Beautifully presented in a coupe glass, its brilliant purple color was every bit as striking as its flavor. Crafted with Grey Goose vodka, pea flower, pineapple, lemon, and sparkling wine, it was refreshing, vibrant, and perfectly suited to the sophisticated atmosphere surrounding us.

Terri chose the classic Vesper Martini, an elegant combination of vodka, gin, and Lillet Blanc. She enjoyed it so much that by evening's end she had happily ordered three.

Rob was equally content with a fine Scotch served simply over ice.

For dinner, Amy ordered the filet medallions paired with a lobster tail. The richness of the beef and the sweetness of the lobster created a wonderful balance, made even better by her glass of Prisoner Cabernet Sauvignon.

Terri selected the rare ahi tuna with its lightly seared exterior and sriracha coating. She thoroughly enjoyed the dish, although she mentioned that the accompanying sauce was a bit spicier than she preferred. Her advice was simple: use the sauce sparingly and let the quality of the tuna speak for itself.

Rob and I each chose the Chilean sea bass.

It proved to be the evening's only disappointment. The fish was not up to our expectations.

What happened next said everything about Eddie V's commitment to hospitality.

When we shared our honest impressions with Aileen, she immediately apologized with complete sincerity. There was no defensiveness and no attempt to explain away our experience. Management quickly arrived at our table and graciously offered to prepare another entrée.

Both of us accepted the recommendation of the rare ahi tuna.

Remembering Terri's advice, we used the accompanying spicy sauce sparingly. The tuna was perfectly seared with a cool, rare center, remarkably fresh, and beautifully prepared. With just enough heat to complement the fish rather than overwhelm it, it proved to be exactly the replacement we had hoped it would be.

Every restaurant occasionally misses the mark. The finest restaurants distinguish themselves by the way they respond, and Eddie V's handled the situation with professionalism, generosity, and genuine concern for our experience.

A shared order of beautifully caramelized Brussels sprouts rounded out the meal and was enjoyed by everyone at the table.

For dessert, I finished with an espresso martini, a fitting conclusion that bridged dessert and after-dinner coffee.

Amy chose With Love From Eddie, a rich creamy dessert cocktail that was every bit as indulgent as its name suggests. Smooth and beautifully balanced, it provided a delightful ending to the evening without ever feeling overly sweet.

The kitchen also surprised us with Bananas Foster, flambéed tableside over warm cake with vanilla ice cream and fresh whipped cream, along with a wonderfully light lemon torte whose bright citrus notes provided the perfect finishing touch.

As the evening continued, we noticed several familiar faces from the Palm Beach dining community. That somehow seemed appropriate. Eddie V's has the unmistakable feel of a place people return to time and again—not simply because of its menu, but because of the complete experience it offers.

I've always admired the elegance of the 1940s—an era when gentlemen dressed for dinner, women wore beautiful dresses, live music filled the room, and an evening out felt like an occasion rather than another stop on a busy calendar.

Eddie V's doesn't try to recreate that era.

Instead, it captures the feeling that made it so memorable.

    Great food.
    Exceptional cocktails.
    Live jazz.
Service that made us feel genuinely welcome.
    Family gathered around a table.

Those are timeless ingredients for a memorable evening, and they came together beautifully at Eddie V's.

    Some restaurants serve outstanding meals.

Eddie V's serves something even more memorable.

    It serves an evening.
